Easter

We started off Easter morning by opening up our baskets.  Nuts, Dove chocolate, marshmallow eggs for Sam and Cook's Country books for Audrey and Sam. The Easter Bunny sure knows what we like!

Then we prepared our Easter meal. Originally I could not figure out how to get everything cooked and ready at the end of church (we go to the 1pm-4pm session). But then I figured out we could eat our Easter meal before we went to church. That worked well! Ham, deviled eggs, potato dish and Sunshine Jello were on the menu. I got the ham and potato recipes from Robin C at work. She is an awesome cook!


BAKED HAM: Place ham in heavy pot and bake for 30-40 minutes. Can use 1 cup broth or water if needed. In a saucepan melt 1/2 cup butter, add 1/2 cup brown sugar and 2-3 tablespoons prepared mustard. Pour over ham and cook another 30 minutes to get a crusty glaze over the ham.


POTATO DISH: Peel and then thinly slice potatoes. Place one layer of potatoes in a greased casserole dish. Cover with salt & pepper, grated sharp cheddar cheese and heavy whipping cream. Repeat potato, cheese and cream layer until dish is filled. Sprinkle last layer with fresh ground nutmeg. Bake in 350 degree oven for 30-45 minutes, no cover.


SUNSHINE JELLO
2 cups boiling water
6 ounce package orange jello
6 ounce frozen orange juice concentrate
20 oz can pineapple tidbits, drained, reserving juice
1 small can mandarin oranges, drained, reserving juice
1 cup mandarin orange and pineapple juice, reserved from the canned fruit
3.4 oz instant lemon pudding mix
8 oz carton whipped topping

Mix boiling water and jello together for 2 minutes. Mix in frozen OJ concentrate until dissolved. Mix in reserved 1 cup fruit juices. Add fruit. Put in a 9x13 dish and refrigerate until set. Make pudding according to package directions. Pour over set jello and refrigerate for 5 minutes. Drop whipped topping in several mounds on top of pudding layer and carefully spread.


DEVILED EGGS: Boil eggs, cool and remove shells. Slice in half and scoop out yolk. In a bowl add mayonnaise, mustard, salt & pepper and paprika to taste. Evidently you also need to make sound effects when you scoop the mixture into the egg whites...see below!

Stake Easter Program

I was asked to co-accompany the Spokane Valley Stake choir for an Easter presentation. I played the piano and Jackie Halversen was on the organ while Becki Stevens was our director. We had practices on February 24th, March 10th and March 17th. Our performance was on Sunday evening, March 24th. Between the Stake choir songs, each ward choir presented. Below was the order of the program (the portions that I participated). I really enjoyed the version of God So Loved the World. It was not the one I was familiar with, but it is probably my favorite version now.

Movie Night

We waited a few weeks to celebrate Audrey's birthday movie so we could see the one she was interested in seeing. We often go to matinees (cheaper) but splurged and went to a Friday evening showing of Disney's Oz. We really enjoyed the movie and the plot twists. For dinner we each picked our favorite restaurant in the food court and then walked the mall prior to the movie starting. A fun evening out with family!

RS Birthday Dinner

We had our Relief Society Birthday Dinner tonight. Sisters could sign up to make different items - I signed up under Bundt cakes and tried out a new recipe. It was delicious! The evening was focused on learning so after a few different speakers, they had a book exchange. It was a nice relaxed evening.


PISTACHIO CHOCOLATE BUNDT CAKE
1 package yellow or white cake mix
2 packages pistachio pudding mix (dry powder, do not prepare)
1/2 cup water
1/2 cup milk
1/2 cup vegetable oil
5 eggs
1/3 cup cocoa powder
1/3 cup chocolate syrup

Preheat oven to 350 degrees and prepare bundt pan by spraying with non-stick spray. In a large bowl, blend together the cake mix, pudding mixes, water, milk, oil and eggs. Mix with an electric mixer for several minutes at medium speed. Divide the batter evenly between two bowls. To one of the batters add the cocoa powder and chocolate syrup. Mix Well. Leave the other batter "plain" (pistachio). Using two separate measuring cups, one for the chocolate batter and one for the pistachio, layer into the pan. Scoop one flavor into the pan, then scoop the next flavor in, overlapping about half the previous batter and half a new section. Repeat until all the batter is gone. Tap the bundt pan to level out the batter. Bake for about 50 minutes until knife comes out clean when tested. Let cool. Serve with a dusting of powdered sugar or with chocolate ganache. (Note: I did put the chocolate ganache on the cake but had taken the picture prior to doing so).

CHOCOLATE GANACHE
8 ounces good semisweet chocolate chips
1/2 cup heavy cream
Cook the chocolate chips and heavy cream in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. Drizzle over the bundt cake until evenly covered.

Other recipes from that night - made by Susan Clifford:

CHICKEN and BACON PARMESAN PASTA
1/2 cup heavy cream
1/4 cup cream cheese
1/4 cup grated Parmesan cheese
2 whole eggs
1 tsp garlic powder
1/2 tsp crushed red pepper flakes (or less depending on taste)
1/4 tsp ground black pepper
1/2 pound penne pasta
1/2 pound bacon, cooked and roughly chopped
2 grilled chicken breasts, sliced and seasoned (Lawry's Garlic and Herb marinade)

Place cream and cream cheese in a small saucepan. Heat over low until cream cheese is melted and whisk until smooth. Remove from heat. Add the Parmesan cheese, beaten eggs, garlic powder, red pepper flakes and pepper. Whisk until blended. Cook pasta according to package directions. Drain pasta (reserve 1/2 cup hot water) and return to pot. Immediately add the white sauce and toss to coat. The hot pasta will cook the eggs. Stir in the bacon and add some reserved pasta water to loosen the sauce. Top with grilled chicken.

CRUSTY RUSTIC BREAD (no knead)
3 cups flour
1 and 3/4 tsp salt
1/2 tsp active dry yeast
1 and 1/2 cups warm water (about 110 degrees)

In a large mixing bowl, whisk together flour, salt and yeast. Pour in warm water and stir mixture with a wooden spoon until a shaggy ball forms. Cover bowl with plastic wrap and allow to rise for 12-18 hours (on the counter at room temperature). Heat oven to 350 degrees. Once oven has reached 450 degrees, place a cast iron pot covvered with lid into preheated oven, heat pot for 30 minutes. Meanwhile, turn dough out onto a heavily floured surface then shape dough into a ball. Cover dough with plastic wrap and allow to rest whil pot is heating. Remove pot from oven and with floured hands, carefully drop dough into hot pot (you don't need to grease the pot), cover with lid, then immediately return pot to oven and bake 30 minutes. After 30 minutes, remove lid from pot and bake uncovered for 15 minutes. Remove from oven and allow bread to cool on a cooling rack. Once completely cooled, bread stores well in an open paper bag (it helps the bread maintain the crisp crust). ** While mixing together, you can add what you like. The 3 options Susan made were: (A) orange zest, almonds and dried cranberries (B) 1 cup gruyere, lemon zest and fresh chopped rosemary (C) 6 ounces of grated sharp cheddar.

Reuben Panini



REUBEN PANINI
Butter
Rye bread
Swiss cheese
Sauerkraut, squeezed and drained, coarsely chopped
Russian dressing
Corned beef or pastrami

Used my panini press to make this delicious sandwich. Butter the outside of each slice of bread, place cheese on the inside of one slice, top with about 1 tablespoon of sauerkraut, Russian dressing, a couple slices corned beef or pastrami, another tablespoon of sauerkraut, cheese and the other slice of bread. Grill until golden brown and the cheese has melted.

I just used bottled dressing, but if you are looking for a Russian Dressing recipe, mix together the following ingredients.

1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup ketchup
1 tablespoon Worcestershire sauce
2 tablespoons onion, grated
1 tablespoon horseradish
1/2 lemon, juice
1/4 teaspoon chili sauce
1/4 teaspoon paprika

Quilts

Below are three hand made quilts that I have collected over the years. The Texas Star quilt was made by Great Grandma Sarah Byington for my Mom and Dad's wedding present (November 1960). See the picture where the quilt was displayed at the reception that was held at the Argonne Building.


The pink quilt was made by Great Grandma Zella Steele for me and I believe this was a birthday or Christmas present made while I was relatively young (in the early 1970's).


The green one was made by my Grandma Kathy Whisler for our wedding present (November 1988). See the picture where the quilt was displayed at our wedding reception held at the Foothills Building.

War Horse




I originally purchased the Best of Broadway tickets for Audrey and I to attend, however, she had so much homework to finish and just not enough time in the day to do it. So John and I went instead. We first had dinner at Casa de Oro and then headed downtown. It was a wonderful performance! Definitely was not the normal fun/musical performances we've gone to before. This was a deeply moving and creative show. When the performance concluded, the theater was virtually silent before the clapping started. A little about the production: "War Horse originally opened in 2007 at the National Theatre of Great Britain. The collaboration with South Africa's Handspring Puppet Company produced a performance that immediately began selling out and soon the performance moved to London's West End. In 2011, Ware Horse opened at the Lincoln Center and won 5 Tony Awards. The tour launched in June 2012 in Los Angeles, and Spokane is only the 19th city in the United States to experience this stunning production"
