Lion House Potatoes Au Gratin

LION HOUSE POTATOES AU GRATIN
4 large potatoes peeled and sliced
1 medium onion, chopped
2 tsp salt
4 TBS butter
1/2 cup flour
2 & 1/2 cups milk
1 cup whipping cream
1 & 1/4 tsp salt
1/8 tsp black pepper
2 cups cubed cooked ham
2 cups grated cheddar cheese

Preheat oven to 350 degrees. Place potatoes, onion and in large saucepan. Cover with water and bring to a boil. Turn off heat & let sit for 5 minutes, covered. Drain the water off the potato mixture and spread potatoes in a 9×13 inch glass baking pan; set aside.

Melt butter in saucepan over medium heat. When the butter starts to foam, stir in flour. Stir constantly until smooth, about 30 seconds. Mix the milk, cream, salt and pepper together and slowly add the milk mixture to the roux. Stir constantly until sauce has thickened. Reduce heat to low and stir in cubed ham and half of the grated cheese. After the cheese has melted, pour sauce over the potatoes. Top with remaining cheese. Bake 40 to 45 minutes. Makes 10 to 12 servings.

Note: We used Colby Jack cheese and found it to be too mild. Would use medium or even sharp cheddar next time.

Cabinets: Before & After

BEFORE:
There are the set of drawers in our upstairs closet where we stored games. They did not slide well and were too small for some of the larger games. The odd shapes of game boxes made it difficult to get everything in there.


AFTER:
John removed the drawers and replaced with adjustable shelves with cupboard doors. These are so much easier to use and when we put the games away, we now have empty shelving as they allow the games to fit together better. A little touch up paint and baseboard trim and it will be completely done. Thanks John!!

Greenbluff

We went on our annual trip to Greenbluff today. In addition to the craft vendors, today they had a zebra? You can see it behind Audrey & I in the picture below. We had a nice time checking out the crafts and then headed back to the main store to buy a gallon of fresh apple cider. We also wanted to get a pumpkin donut, but then Brother Wynia saw us in the crowd and gave us their extras - still warm! Thanks!

Afterwards we went home and relaxed, after making sure to get a jack-o-lantern pizza to accompany our apple cider.

Dakota's Eagle Project

John helped at our nephew Dakota's Eagle project on Saturday, September 24th, along with members of our ward/troop.

The Liberty Lake paper (The Splash) featured this article in their October 27th edition:

Dakota Gramlow, 14, installed a new gate at Liberty Lake Regional Park in September for his Eagle Scout project. With help from area businesses, members of his ward and fellow troop members, Gramlow cleared barbed wire and debris from the area in addition to putting in the gate. Gramlow, a member of Troop 415 based out of ward 15 of the LDS Church, attends Centennial Middle School in Spokane. He is the son of Shaune and Michelle Gramlow.

Fall Apple Salad


FALL APPLE SALAD

Salad:
Lettuce (any combination of Romaine, leaf and/or spinach)
1/2 c. craisins
1 c. chopped pecans
1 apple, diced (used Honey Crisp)
6 slices bacon, cooked & crumbled
Combine the above ingredients in a bowl

Dressing: Combine these together
1/2 c. poppy seed dressing
1/2 c. balsamic vinaigrette
Combine the above 2 ingredients together. Mix well. Drizzle over salad.

Oatmeal Raisin Cookies


These were SOOO good! We had a hard time saving any for John. This is the recipe that Audrey tried at great-aunt Carol's house on Memorial Day. Sometimes it takes awhile to try a recipe, but this was definitely worth the wait.

OATMEAL RAISIN COOKIES
Cream together:
1 c. butter
1 c. brown sugar
1/2 c. white sugar
Add:
2 eggs
1 tsp vanilla
Next add:
1 tsp soda
1 tsp cinnamon
1/2 tsp salt
Combine a little at a time until incorporated:
1 & 1/2 c. flour
3 c. oatmeal
1 c. raisins

Bake 350 degrees for 10 to 12 minutes.

Slumber Party

We headed out to Twin Lakes & Corral's cove (see namesake above) for a movie night and slumber party. We had tacos for dinner and then settled down to watch movies in our PJ's and snack on popcorn, M&M's and Twizzlers. We brought "Up" and "Princess Bride" as the Hartman's had not seen either of these movies. They loved "Up" but did not love "Princess Bride" - say it isn't so! The next morning we enjoyed Mary's famous waffles and a relaxing Saturday morning.

MARY'S WAFFLES
1 & 3/4 c. flour
3 tsp baking powder
1/2 tsp salt
2 egg yolks, beaten
1 & 3/4 c. milk
1/2 c. oil
2 egg whites, stiffly beaten

Combine yolks, milk and oil. Stir in dry ingredients. Fold in egg whites, leaving a few fluffs. Cook in waffle iron. Serve with warm syrup, fruit and whipped cream.

Tuna Noodle Casserole

This was super easy and warm & comforting. Nice for a fall day!


TUNA NOODLE CASSEROLE
5 cups cooked pasta
2 cans tuna, drained and flaked with a fork
2 cups peas, frozen
2 cans condensed cream of mushroom soup
1 cup milk
½ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp pepper
1/2 cup finely crushed french fried onions (optional)

Preheat the oven to 375 degrees. Combine the pasta, tuna, and peas in a large mixing bowl. In a separate bowl, whisk together the soup, milk, cheese, garlic powder, and pepper, and pour over the top of the pasta mixture. Stir to combine and pour into a greased casserole dish. Bake, covered with foil, for 20 minutes. Remove the foil, sprinkle the french fried onions evenly over the top and bake uncovered for an additional 5 minutes.

Hire Ability Day

On October 18th I went to Hire Ability Day as it is an event that Safeway participates in. The luncheon was held at the Davenport and then there are speakers to motivate businesses in hiring developmentally diverse work forces. It is a great event. After the event was over the centerpieces were given to the person with the orange dot on their program which happened to be me for my table. Isn't it pretty?

After the event, they have an on-line survey to try to improve the event in the future. I took the survey and was notified a few weeks later that I had won the $100 gift card to the Davenport. I will be sure to put that to good use!

Ward Boundary Change!!

We had a meeting at the Stake Center tonight to learn of our new Ward Boundaries. We are now the West Valley Ward (instead of 15th) and the 22nd Ward is now the Foothills Ward. They took anyone from our ward that went to East Valley School District, which means we lost about 30 families. Afterwards there was a going-away potluck at the building so we could express our appreciation and sadness. We will miss these families!!

Bishop Cutler lost both his counselors and secretary to the boundary change, so tonight John was put in as 1st Counselor, Randy Scott as 2nd Counselor and David Hyde as Executive Secretary.

Symphony: Frank Sinatra Jr

Went to the symphony with mom tonight. The first half of the night the orchestra played big band numbers under the direction of Dan Keberle. The second half Frank Sinatra Jr performed many familiar numbers (New York, New York; One for My Baby; My Way). It was an enjoyable evening.

John...Denver

So on my calendar when I planned to go to Denver, it said "Sam Denver" which makes perfect sense. When I put John's trip to Denver on the calendar, well.. it said "John Denver" and that made me think of Rocky Mountain High rather than a plane trip!

Brian and Kathy called John and asked if he would be interested in helping sheet rock their basement. He agreed and they purchased his plane ticket. He arrived on Wednesday, October 5th and stayed until Wednesday, October 12th. He got a TON done in a week!!

Time out for Women

I planned a trip to Denver so that I could go to Time Out for Women with my sister, Kathy. First a little back story on the trip down. I had my niece Angela drop me off at the airport Thursday at 9:15am as I had a 10:30am flight. That flight was canceled. I was then scheduled for a 1:15pm flight thru Salt Lake, but with no car and a long wait, I was kind of stuck at the airport. I figured that I would grab something substantial to eat, so after finding something hearty, found a place to sit in the food court area. Just as I was settling in, who should head my way but our Bishop, Dan with his wife, Kathy. They sat at my table and we visited while we ate (they were headed to their son's home in Arizona). We separated to our specific gate around 12:30pm. Well, my 1:15pm flight ended up being delayed. Pretty soon Dan and Kathy were at my gate letting me know their flight had been delayed as well. We visited for a couple more hours. Finally, my flight was called and I left at 4:45pm. Come to find out, mine was one of the last flights to leave for the day. By the way, the main reason that no flights were coming in or out of Spokane all day was due to fog - poor visibility and slick conditions on the runway. I arrived in Salt Lake 7:45pm and raced to another concourse to catch my 8:10pm flight. I got there, sore legs and all, only to find it too was delayed! They put a hand written sign above the desk that said "Flight delayed, maybe 2 hours, don't know". There was no flight crew for our flight, so the delay was having to wait for them to return from Denver. Finally got into the Denver airport about 11:30pm!

Back to the reason I was headed to Denver - to visit with Kathy and go to Time Out. We were able to do a little shopping during the day on Friday and she treated me to lunch at Panera. Then we headed back to her house to get ready for the evening program that started at 6:30pm. She had gathered a few of her friends to go with us and everyone carpooled, so in the van were Jill, Tami, Joni & her friend from Utah, plus Kathy & myself.
FRIDAY PROGRAM - the program included Dallyn Vail Bayles (Vocal Artist), Heidi S. Swinton (the author of President Thomas S. Monson's biography) and Mary Ellen Edmunds (well known author and former director of training at the MTC). The program was wonderful! Mary Ellen spoke first and touched on the topic of becoming who you are and have always been - a Child of God. Dallyn sang selections from Broadway musicals (like "Bring Him Peace" from Les Miserables) and church music (Praise to the Man). Heidi concluded the evening by sharing her experience writing President Monson's biography. She touched on reaching out and making a difference - the sweetest experience in all of mortality is to be the answer to someone else's prayer.


SATURDAY PROGRAM - the program included Hilary Weeks (well known singer, songwriter and author), Mariama Kallon (survivor of war-torn Sierra Leone), Emily Watts (Senior editor, Deseret Books), D. Kelly Ogden (professor ancient scripture, BYU), Merrilee Boyack (author) and Emily Freeman (author).

One of Kathy's friends decided she wanted to sit closer on Saturday, so headed down early to save us seats. Yeah for Tami! We had wonderful seats (maybe 8 rows from the stage) and a great view. They started the program by announcing that there had been a small fire at the complex over-night and the on-site food that was originally planned, would be in very limited quantities due to loss of refrigeration. However, the good news was that no other damage occurred & we had power, so we were able to continue the remaining program as planned.

Just like last night, the program was top-notch. Hilary Weeks started the program. She is a talented gal! She plays the piano, sings and to top it off is a great speaker. Then we heard from Mariama Kallon. What an inspiration! She has seen more than her share of diversity, yet has such a positive attitude. She spoke about rising above your circumstances and being a person of worth. She had a great story to tell when she was a missionary at Temple Square. She prayed to be able to teach someone from Africa, got off her knees and ran to the other end of Temple Square. She only had to wait 5 minutes and her prayers were answered. What an example of faith.

Next up was Emily Watts. She was funny. My favorite story was when she went as a leader to girl's camp and went on a hike with a young woman who did not think she could complete the hike. She also spoke of family traditions and making good habits. She ended by saying we need to be the woman we are because we are worth it! We then heard from D. Kelly Ogden. Following the Savior isn't about perfection all at once, it's about living like Him a little more every day.

We were then dismissed for our lunch break. Kathy's friend stayed at our chairs and knitted while we headed out to get lunch and bring her back something. We were at a place called the Denver Merchandiser Mart which was right in the middle of an industrial area of town. Not a lot of food choices, just fast food. It was cold and rainy so Wendy's sounded good (Chili?!). Unfortunately with the few food choices, everything was crowded. The line snaked through the dining area and almost out the door. It was kind of cute when the local workers would come around to the door, open it, look at the intense line and just back out the door. They had no idea why their normal burger joint was so crowded - and all women! We literally were in line for 1 hour by the time we got to order, so we grabbed our food and headed back. The afternoon session had just started, so we ate our lunch quietly and got ready for more speakers.

Hilary Weeks performed some new songs from her album and then we heard from Merrilee Boyack. I loved how she presented her topic of Becoming Unique. She had a picture of someone who was an example of her topic and then she told their story. B = Bold, E = Eternally Minded, C = Creative, O = Outward Focused, M = Meek

And then the power went out........

Merrilee did not miss a beat. Once it was determined that the power was not going to come back on quickly, she walked to the center of the room and spoke loudly so we could hear. E = Enlightened and U = Unique.

They were able to get a battery powered microphone, but the power was out to the whole block and did not sound like it would be fixed for a few hours. So Hilary Weeks performed a number on the piano while someone shined a flashlight for her music.

We had one more presenter, Emily Freeman. They asked her to give a short message and then we would have to leave early. She spoke, also in the dark, and gave a small portion of her talk. They were about to conclude and then the lights came on - YEAH! So they had Emily complete her presentation. She said we can't be almost committed to living a Christlike life, we have to be totally committed. Hilary Weeks concluded the program. What a great event!

Halloween Decorations

You remember the 1960's show Bewitched? You know I was named after the main character, Samantha Stevens? Well, because of that I kind of get a chuckle out of signs like "The witch is in" or "Park broomstick here". Audrey and I saw this sign and knew it belonged in my Halloween decoration collection!
