Spent the last three Sundays in January rehearsing for Stake Conference. The Stake Choir that performed the Easter Cantata last year was asked to sing. Jackie Halversen called and asked if I would sing with the choir on two of the numbers (since playing the synthesizer during Stake Conference probably would not be good). She asked if I would play the organ on the third number while Kevin played the piano and the choir sang. This was an arrangement of America the Beautiful with Onward Christian Soldiers. All three numbers were ones that Jackie had arranged herself.

Tarragon Chicken Casserole
This was another recipe I pulled out of the archives. It suggests cooking uncovered, but that tended to dry out the top of the noodles and cheese for us, so perhaps cover except the last 5-10 minutes?
TARRAGON CHICKEN CASSEROLE
2 cans condensed cream of chicken soup, undiluted
2 c. half and half
4 tsp dried tarragon
1/2 tsp pepper
16 oz linguine or spaghetti, cooked and drained
6 cups cubed cooked chicken
1/2 c. grated Parmesan cheese
Paprika, optional
In a large bowl, combine soup, cream, tarragon and pepper. Stir in the pasta and chicken. Transfer to an un-greased 4qt baking dish. Sprinkle with the Parmesan cheese and paprika. Bake at 350 degrees for 30 minutes.

Cheeseburger Soup
It made sense to try this soup soon after we made the mac&cheese dish, just to use more of the American cheese from the fridge. This took a lot of slicing and dicing by Audrey and I!
CHEESEBURGER SOUP
1/2 pound ground beef
3/4 c. chopped onion
3/4 c. shredded carrots
3/4 c. diced celery
1 tsp dried basil
1 tsp dried parsley flakes
4 TB butter (divided)
3 c. chicken broth
4 c. diced & peeled potatoes
1/3 c. flour
8 oz process American cheese, cubed (about 2 cups)
1&1/2 c. milk
Salt & pepper to taste
1/4 c. sour cream
In a large pan, brown beef; drain and set aside. In the same saucepan, saute onion, carrots, celery, basil and parsley in 1 TB butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small saucepan, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from the heat; blend in sour cream.

This is a recipe I've had for awhile and just pulled it out of the recipe box again. It sounds odd with the pimientos & chicken, but it is tasty.

3 c. cubed cooked chicken
2 oz jar diced pimientos, drained
In a large saucepan, melt butter. Stir in flour until combined. Add cream and 1&1/2 c. broth; stir until smooth. Cook and stir until thickened and bubbly; cook and stir 2 minutes more. Remove from heat. Add cheese and stir until melted. Stir in macaroni, chicken and pimientos. Add additional broth if needed. Pour into a baking dish. Pizza, Games & Movie
Headed out to Steve's place for pizza, games & a movie. Went into Post Falls with Angela & Audrey to pick up the pizza while John and Steve worked on his computer. When we returned we played a rousing game of liar's dice, which went well with our evening movie choice of Pirates of the Caribbean 4. While there we heard that John's sister, Marcie, had her baby girl yesterday. Siouxmani was born on 1/6, 11 weeks early, and weighed 3lbs 3oz. Tiny!

New Year's Day
Got an invite up to Grandma Carter's for supper. Met Robert's fiance Carmella. They are getting married at the end of January in Seattle and we plan to attend. Nice time visiting with family and relaxing.
