Poppy Seed Chicken


I saw this on my blog reader from a site called Sweet Basil. This was a hit in our house and super quick!

POPPY SEED CHICKEN
3 chicken breasts, cooked and diced
2 cans cream of chicken soup
16 oz sour cream
1 TB poppy seeds
1 package Ritz crackers
1 cube butter, melted

Heat oven to 350 degrees. Mix soup, sour cream and chicken together. Pour into a 9x13 pan. Break up the crackers and mix with the melted butter and poppy seeds. Sprinkle over the chicken mixture and place in oven. Bake for 30 minutes and serve over rice.

Random notes

I was at my annual exam when my nurse practitioner asked if I was going to have any more kids. I said "Having a 17 year old is working for me". She then did a double take looking from me to my chart and back again. She said she misread my chart and thought I was 34 instead of 43!! John had to ask why I was in such a good mood when I got home!!

ps - I've been doing the Wii fit for a couple months in a semi-challenge with my sister. (She is totally winning by the way.) Any way, I really don't like when I step on the balance board and one time it says "ok" in a nice, happy voice and the next time it says "ohhh" like it can barely stand to hold my weight. I also don't appreciate when I figure out my Wii-Age. Sometimes it has said I was 56 (because I was not very coordinated on their test exercise), but finally I got it to say I was 23!! I was quite proud of that, but not nearly as much as someone thinking that I look nearly 10 years younger than I am : )

Wedding


We attended John's niece Jody's wedding today. After the ceremony they had a buffet dinner and dancing. It was a lovely event and we had a good time. Here is John talking to Robert and Audrey's arm is in the picture. I'm on the other side of her arm. I did a great job of not getting my picture in any of the photos today.

Pinewood Derby


John was in charge of treats for the Pinewood Derby. I got a brilliant idea to make a Car-Cake. I have to give kuddos to those cake decorators in the world. It is harder than it looks. The only reason it remotely looks decent is that Audrey took over and tidied things up for her mom and dad.

Full Saturday

Mom and I went to the Relief Society Women's Conference in the morning. The theme was "Lift Where You Stand". There was a speaker who talked about Lifting in the Home, another who spoke on Lifting Ourselves and a final speaker who talked on Lifting our Neighbors. After being spiritually fed we headed into the cultural hall for Cafe Rio! I had heard so many people talk about Cafe Rio salads over the years, but had never tried any myself. It was very tasty and I can now see what all the fuss was about. Thankfully they shared the recipes with us so I will have to attempt this at home. Yummy!
Then we took a long break and met up again in the evening to go to the Spokane Symphony with Ben Vereen concert. Good music and showmanship. He is quite the entertainer. Nice end to a great day.
