Cougar Gold Soup

For those outside Cougar country - Cougar Gold cheese is produced by the Washington State Creamery and sealed into cans. Each can sells for $20-25 depending on what flavor is purchased. We always go with the traditional and it is best served with Triscuts.


COUGAR GOLD SOUP
1/2 c. butter
1 c. chopped onion
1 c. thinly sliced celery
1/4 c. flour
3 c. chicken broth
1 c. grated carrots
3 c. Yukon gold potatoes, peeled and cubed
2 c. milk (or 1/2 & 1/2)
2-3 cups shredded Cougar Gold Cheese
1-2 cups shredded cheddar cheese (would suggest sharp)
Black pepper

In a large soup pot, melt butter over moderate heat. Add onion and celery and saute until tender. Stir in flour until blended. Gradually add chicken broth and cook until slightly thickened. Add grated carrots and potatoes and cook until just tender but still firm, 20-30 minutes. Add milk and reduce heat to low. Add cheeses and stir until cheese are melted. Season with pepper to taste.
