Fruit Salad

EASY FRUIT SALAD
1 pint fresh strawberries, sliced
11 oz can mandarin oranges, drained
8 oz can pineapple chunks, drained
21 oz can peach pie filling
Optional: 2 bananas, sliced
1 cup green or red seedless grapes

Drain the mandarin oranges and pineapple. Add all ingredients in a large bowl and gently mix. Chill until ready to serve.

Funeral Service

Marcie's husband passed away early Monday morning and his funeral was today. I was honored to play the organ for the services. Especially thought the words spoken were what we all needed to hear. Below is the obituary.

D. Glen Osborn: Passed away on May 14, 2012 in Spokane Valley, WA. A loving husband and devoted father, Glen is survived by his wife, Marcie Osborn; seven children, Tyler, Jacob, Lindsey, Riley, Derek, Gracie and Siouxmani; parents, David and Roberta Osborn; four brothers, Joe Osborn (Melissa), Reed Osborn (Raelynn), Jared Osborn (Melissa) and Ben Osborn (Celeste); four sisters, Mary Beaumont (Marty), Ruth Anne Conant (Billy), Jenna Osborn and Camille Bowers (Bradley); and numerous aunts, uncles, cousins, nieces, nephews and in-laws. Glen was born on July 21, 1973 in Logan, UT and grew up in the Spokane Valley, graduating from University High School in 1991. He was a wonderful son and brother. He excelled in wrestling and placed 2nd in State. He was an Eagle Scout, avid fisherman and enjoyed family activities. He attended BYU-Idaho and SCC. He was a pipefitter and HVAC technician. Funeral services will be held on Saturday, May 19, 2012 at the LDS Bowdish Chapel, 40th and Bowdish Rd, Spokane Valley with Bishop Gary Percival conducting. Interment will follow at South Pines Cemetery, Spokane Valley.

Mother's Day

John had early morning Bishopric meetings, so we quickly opened gifts before he headed out the door. Got some new drinking glasses from Crate & Barrel and a couple of seasons of Alias. Then Audrey and I got ready and headed to church services.

After church we headed out to Steve & Angela's as we had been invited to a family dinner. I originally was not looking forward to getting out of the house (since I would be missing my afternoon nap), but honestly we had such a nice time that I am grateful that this was planned. Many of the family members were there (Ralph, JoAnn, Anngela & kids, Nancy, Verne, Grandma Carter, Dena). They served turkey, mashed potatoes, gravy, green salad, and the items each of us had brought to add to the meal. We brought a rhubarb dessert that we had just tried for the first time. After visiting for awhile, we got word that Marcie's husband was in critical condition in the hospital. Late that evening Marcie called our home and gave us the update. Things were not looking well.

Rhubarb Squares

These were a hit! I thought they got better the next day. Reminded me of lemon bars, except with rhubarb.


GO ANYWHERE RHUBARB SQUARES

Crust:
1 c. flour
1/3 c. confectioner sugar
1/3 c. butter
In a bowl, combine the flour and confectioner sugar; cut in butter until mixture resembles coarse crumbs. Press into the bottom of a greased 11-x-2 inch baking pan. Bake at 350 degrees for 12 minutes.

Filling:
1 c. sugar
1/4 c. flour
2 eggs, lightly beaten
1 tsp. vanilla
3 cups finely chopped rhubarb
For filling, combine the first four ingredients in a bowl. Stir in the rhubarb; pour over warm crust. Bake at 350 degrees for 35-40 minutes or until toothpick inserted near center comes out clean. Cool on a wire rack. Serve with whipped topping if desired. Store in refrigerator.

Dark Shadows

As a Pre-Mother's Day event, we headed downtown to see the movie Dark Shadows. I thought it was pretty funny with all the references to the 70's. There were plastic grapes and bell-bottom pants. But my favorite reference of all was to the female characters' obsession with macrame. She wore a set of macrame owl earrings in the next scene. It was great! After the movie we went across the street and ate at PF Chang's. It was crazy because we were seated right next to some friends from our old ward, Brenda, Theresa and Connie Frazier. So we got to visit with them for awhile.

Grille from Impanema

Met up with the Hartman's at the Grille from Impanema in CDA. John had spent the last few weeks helping Richard re-roof his house, so the Hartman's took us out as a thank you dinner. Larry & his wife were also there as Larry spent a ton of time on the roof too. Had a good time at dinner. This is a Brazilian style restaurant where they just keep bringing meat on a skewer to your table and slicing off portions until you tell them you are done. They also bring grilled veggies and the best - grilled pineapple. In addition, you have access to a very large buffet of main dishes, side dishes, salads, breads and veggies. Lots of good food!!

Avengers

Angela H wanted to surprise her husband on his birthday by getting 20-30 of his closest friends to a movie at the same time. We met up early at the evening showing - on opening night - of The Avengers. There were a lot of people there that we knew making it a real party atmosphere - Whalens, Thompsons, Kremins, Forschlers, Jody/Brock, Simmons, Farmans, Spears, Fosburgs, Carters and others that we did not know but were with the group. Fun! And the movie was enjoyable too!
