I had the day off today. Got the carpets cleaned, made lasagna and then made 2 desserts for John's potluck at work tomorrow. Which also happens to be his last day at West Valley. Timing worked out well since they had already planned a get-together so now they can call it a going away party too!

LASAGNA
Ingredients
1 pound ground Beef
1 pound Sausage
2 cloves Garlic, Minced
2 cans (14.5 Ounce) Whole Tomatoes
1 small can tomato sauce
2 Tablespoons Dried Parsley
2 Tablespoons Dried Basil
1 teaspoon Salt
3 cups Cottage Cheese
2 whole eggs, beaten
½ cups Shredded Parmesan Cheese
2 Tablespoons Dried Parsley
1 pound Shredded Mozzarella Cheese
1 package Lasagna Noodles
In a large skillet or saucepan, combine ground beef, sausage, and garlic. Cook over medium-high heat until browned. Drain the fat. Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt. After adding the tomatoes, the sauce mixture should simmer for 45 minutes. In a medium bowl, mix cottage cheese, eggs, Parmesan, 2 tablespoons parsley. Stir together well. Set aside.
To assemble:
Arrange in this order: Noodles, cottage cheese mixture, Mozzarella cheese, meat sauce - repeat. Sprinkle top with additional Parmesan. Bake 350-degree 30 minutes, or until top is hot and bubbly.
